Healthy cookies made with oats and bananas. Recipe by Lisa Simon, RD
Preheat the oven to 180 fan and line a baking tray
Put all the ingredients into a large bowl and mix well – it will be quite wet
Dampen your hands slightly, then spoon out portions and form rough balls before flattening slightly on the baking tray
Bake for 12-14 minutes and allow to cool on a cooling rack
These can be frozen for a handy take-to-work snack, or whenever you fancy one!
1tbsp chia seeds mixed with 3tbsp water, stir after a couple of minutes and wait until it forms a gel consistency.
