Hearty and warm dish for family dinner!

Ingredients

1 medium pumpkin
Meatless Farm mince • 400 g
1 large white onion, chopped
2 large carrots, chopped
garlic powder • 10 g
paprika • 20 g
1 tin chopped tomatoes
1 plant-based cream alternative
Tomato puree • 1 tbsp
salt • 1 pinch
pepper • 1 pinch

Steps

Carefully slice the top off your pumpkin and scoop out the flesh, discarding the seeds (or keep them to roast). Chop the flesh of the pumpkin into chunks.

Remove the Meatless mince from its packaging and cook in a lightly oiled frying pan for 8-10 minutes stirring occasionally, once cooked leave to one side.

Next, fry the chunks of pumpkin, onion and carrots in a high-sided pan until starting to soften. Add the tin of tomatoes, 2tbsp of soured cream, paprika, pinch of salt and pepper, garlic powder and tomato puree. Cook for 15-20 minutes

Add cooked Meatless mince and stir to incorporate all ingredients, until covered in sauce and the whole mixture is warm.

Spoon back into the pumpkin and serve!
