Making kid-friendly, meat-free meals might seem a little daunting but we're here to help! This quick and easy green pasta recipe is a crowd pleaser and with Mighty Pea M.lk in the mix, it's packed full of nutrients and suitable for anyone with dairy, nut, soy and gluten allergies - what a winner!

Pasta • 300 g
1 ripe avocado skin and stone removed
frozen peas • 100 g
A handful of spinach leaves
A handful of fresh coriander
A handful of fresh parsley
vegan parmesan • 4 tbsp
Mighty Pea M.lk • 200 ml
salt & pepper • 1 pinch

Steps

Mighty Method

Cook the pasta in a pan of boiling water according to the packet instructions, then drain and put back into the pan

While the pasta is cooking, blend the avocado, peas, spinach, herbs, cheese and Mighty Pea M.lk together. Season to taste with a pinch of salt and pepper

Pour the blended sauce into the pan of cooked pasta. Stir in the sauce and warm on a low heat.

Serve up and tuck in!
