Try this hearty and nutritious soup! Recipe by Lisa Simon, RD
Saute the onions and ginger in a little vegetable stock/oil until soft
Stir in the spices and stir to coat the onions
Add the sweet potato and butternut squash and stir well into the onions, cook for 5 minutes
Add the stock, lemon juice and a little more water if needed so that all the vegetables are just covered
Bring to the boil then simmer with the lid on for 20 minutes
Transfer in batches to a blender, add the coriander and blend until smooth
Add a twist of black pepper to each bowl and enjoy!
