Ingredients

Spice paste

Shallots • 50 g
Crushed garlic • 3 tbsp
Crushed galangal • 1 tsp

Sweet soy tempeh

Soy or Lupin Tempeh • 300 g
Lemongrass • 1 stick
2 Bay Leaves
2 Red Chillies
Salt • 1 tsp
Coconut or brown sugar • 1 tbsp
Kecap Manis (sweet soy sauce) • 3 tbsp
Sunflower oil • 4 tbsp

Steps

Method

1

Grind the spice paste ingredients into a paste.

2

Heat the oil in a frying pan to prepare for deep frying. Deep fry tempeh until golden brown, drain on wire rack/paper towel.

3

Remove almost all the oil from the frying pan, and leave about 2 tablespoon of oil. Sauté spice paste, lemongrass, and bay leaves until fragrant, about 3 minutes.

4

Add red chillies and sauté until wilted, about 2 minutes.

5

Return the fried tempeh to the pan, season with salt, sugar, and Kecap Manis (sweet soy sauce). Toss/stir until the tempeh pieces are fully coated with the sweet soy sauce.

6

Turn off heat and serve immediately with steamed white rice.

7

Note: We often add fresh chillies, spring onions, roasted peanuts and coriander to garnish, but it’s totally up to you!
