Packed with flavour and nutrition, you can't go wrong with this bowl of goodness! Quick and easy to whip together, it's the perfect weekday lunch or dinner.
Boil the kettle and soak the cashews in boiling water for 20 minutes until they almost double in size.
Cook the rice according to the instructions on the packet.
Dice all the veggies for the salsa and guacamole.
Mix the ingredients of the salsa together, along with the juice of the lime.
Mix the ingredients of the guacamole together, along with the juice of the lime.
Blend the ingredients of the ‘cheese’ sauce together in a blender or food processor.
In a frying pan, heat the tablespoon of rapeseed oil over medium heat for a minute, then add in the Better Bites. Cook for 2-3 minutes, stirring regularly to ensure they are evenly cooked.
Add the rice, beans, salsa, guacamole and Bites into the bowls, then top with the cheese sauce. Enjoy!
