This is our ideal summer dish - light, nutritious and super tasty. Our tempeh rashers balance out this sweet, refreshing salad by adding the perfect, salty and meaty bite - life is all about balance, as they say!
Heat the olive oil in a pan on high heat for 2 minutes
Reduce the heat to medium, then add the Tempeh Rashers to the pan
Cook the rashers on either side for 3 minutes until browned, then set aside
Prepare the apple, lemon and lettuce
Finely slice the rashers to your desired size
Toss all of the ingredients together, bar the lemon wedges and balsamic glaze
Squeeze a couple of lemon wedges over the salad, then place the rest on top of the salad
Drizzle the balsamic glaze over the salad, then serve and enjoy!
