Ingredients

Croissants

1 Vegan Croissant from La Boulangere

Filling

Vegan Pesto • 2 tbsp
A handful of Rocket
3 Sun-dried tomatoes
Vegan Feta from Cauldron Foods • 30 g
Roasted Artichokes • 10 g
Fresh Basil Leave • 5 g
Black and Green Olives • 20 g

Steps

Croissant

Cut the Croissant in half and toast for a few minutes, I like mine lightly toasted but toast to your preference.

Fillings

Start spreading the vegan pesto on each side then assemble the rocket, vegan feta, sun dried tomatoes, artichokes, fresh basil and black and green olives in side (you can add as much or little as you like to your taste) That's all it needs! Super simple, quick and tasty! Enjoy!
