If you want to upgrade your brunch then you will love this recipe! Using the vegan croissants from La Boulangere I have created this stunning greek inspired delight! Let me know if you make this at home and tell me what you think!
Cut the Croissant in half and toast for a few minutes, I like mine lightly toasted but toast to your preference.
Start spreading the vegan pesto on each side then assemble the rocket, vegan feta, sun dried tomatoes, artichokes, fresh basil and black and green olives in side (you can add as much or little as you like to your taste) That's all it needs! Super simple, quick and tasty! Enjoy!
